- Gram flour 1-1/2 cups
- Colocasia leaves – 10
- Ginger garlic paste -1 tablespoon
- Red chili powder – 1 teaspoon
- Turmeric powder – 1 teaspoon
- Cumin seeds – 1 tablespoon
- Salt to taste
- Curd – 1 cup
- Lemon (1/2)
- Oil for deep frying
STEP 1: Cut the stem of colocasia leaves and wash it properly.
STEP 2: Take a big bowl and take gram flour, curd, salt, ginger-garlic paste, red chili powder, turmeric powder, cumin seeds, lemon juice and then add water and make a thick paste.
STEP 3: Take colocasia leaves in kitchen platform, first take a big leaf and apply the marination evenly on the back side of the leaf, then place somehow small leaf from the previous one in the same leaf then apply the marination then again place the smallest leaf of the three above the previous leaf(refer picture)
STEP 4: slightly fold the leaves from the side and make a tight roll. ( It has to be really tight otherwise it will get open)
STEP 5: Steam it in the steamer or you can even steam it in the cooker by placing a small utensil in the cooker for about 15-20 minutes.
STEP 6: Let the roll come into the room temperature, then cut them with the help of the knife.
STEP 7: Take a big and deep cooking pot, add enough oil for deep frying then place the pieces into it carefully.
STEP 8: Let them cook in the high flame till it gets brown.(high flames make them crunchy)
STEP 9: Remove them from the pot and keep it in a paper towel so that it can absorb the excess oil.
STEP 10: Tasty and yummy Patras are now ready to serve.
